Quinoa Greek Salad

My husband and I were traveling earlier this month {more to come on this in the next few weeks}, and it has been a struggle for me to get back in a routine of meal planning and cooking at home. I admit I got too comfortable with meals being planned and prepared for us, and the reality of being back home took a while to set in. With that said, I have been incorporating easy recipes into my meal plan the past two weeks to ease my way back into the kitchen. And, as an added bonus, I have been using recipes that we can eat off of for multiple meals. This quinoa greek salad recipe met all of my requirements, and the taste exceeded my expectations! Better yet, my husband loved it. It’s a win all- around!

Urban Harvest Farmer’s Market + Salad dressing 101

In Houston, there are a variety of activities that promote a healthier lifestyle and can also be a family fun event! One of my favorite things to do is to explore different farmer’s markets in the area. Every Saturday, Urban Harvest holds their weekly market, and a few weeks ago, my husband and I spent our morning there exploring and of course, taste testing!

“Zoodles” with hatch chile crusted shrimp

Did you celebrate National Zucchini Day a couple of weeks ago? Yeah, me neither. I thought I was up to date on current nutrition trends, but I guess I missed this one. Who knew there was a day to honor the squash that is rich in folate, potassium and vitamin A. I started to see my instagram feed fill with images of oversized zucchini, stuffed zucchini boats, zucchini bread and even zucchini noodles. I was quickly inspired to pull out my shiny new spiralizer!

I have wanted a spiralizer for a while, and my wish was fulfilled when my husband got me this one for Mothers Day. Spiralizers come in all different varieties and price points, but the concept is the same. This gadget allows you to make tasty “noodles” out of various vegetables, such as zucchini, butternut squash and sweet potatoes. There are different attachments that create different size “noodles. The possibilities are endless, and just a quick Pinterest search of “spiralizer recipes” will have you drooling!

Baked Rosemary Chicken and Vegetables

My husband and I love to host family and friends over at our house for dinner. There is something about having people in our home, gathered around our dining room table that we cherish. One of my absolute favorite recipes to make, especially when we have guests over, is my recipe for baked rosemary chicken and vegetables. I originally received this recipe from a friend and have prepared it at least a dozen times since (with a few alterations).
