On my recent trip to Cincinnati, my sister prepared a fantastic dinner of twice baked sweet potatoes and baked chicken. I have always been a huge fan of twice baked potatoes, though the butter, bacon and cheese always had me feeling a little guilty after indulging. Don’t get me wrong, comfort foods have a place in our diets every now and then, but including these in the weekly meal plan was out of the question.

Seasonal fall produce + ways to save at the grocery store

Pumpkin season has officially arrived and I couldn’t be happier! Pumpkin spice lattes, pumpkin cream cheese muffins, pumpkin smoothies, pumpkin overnight oats, pumpkin pumpkin pumpkin! As much as I adore all things pumpkin, I don’t want to overlook all of the other fantastic fall produce and foods.

Shopping in season is one quick and easy way to save a little bit on your grocery bill. Produce that is in season is often in abundant supply, thus the prices are lower! Shopping farmers markets or co-ops is a great way to get good prices on local, organic and seasonal produce. Have you ever tried to buy a watermelon in December? Yes, you can usually find one, however chances are you will be paying significantly more than you did for that same watermelon back in July. Sweet Potato, Corn and Black Bean Tacos

Sweet potatoes have always been one of my favorite vegetables, and I love the versatility of them. When I found this recipe, I knew I had to try it. The tacos can be made in a variety of ways for various food preferences – without meat for a vegetarian meal or corn tortillas for a gluten free dish. ┬áThe black beans provide a protein source to make this a complete meal! But for my meat- lovin’ husband, I added rotisserie chicken to the mixture that I had leftover from the night before.
