Greek Stuffed Crescent Rolls

This recipe was inspired by my amazingly creative sister in law (Hi Ronika!). One night, she shared what she was making for dinner and sent over the recipe. Though I didnt have quite a few of the ingredients the recipe called for, I was able to come up with a similar version using what I had on hand, and the result was fantastic! This recipe is very versatile and could be modified with a variety of veggies, meats and cheeses to suit your liking. It came together fairly quickly, and though it seemed intimidating at first, it ended up being pretty easy!

St. Patty’s Day Spinach Muffins

I love St. Patty’s day, partly because my birthday is the next day, but also because of the festive foods and drinks. Growing up, we didn’t have any concrete traditions, but we did occasionally eat the traditional corned beef, cabbage and Irish soda bread meal. Since my hubby turned his nose up at the thought of this meal, I decided to think a little out of the box with a snack I knew my family would go for. Love it, Like, Avoid It: Salad Greens

Do you find yourself browsing the salad green aisle on your weekly grocery trip, trying to decide which lettuce to purchase for the week? It feels like every time I’m on the aisle, the options and combinations of greens grow. Surely I’m not the only one that feels this way! Twice Baked Sweet Potatoes

This healthier version of the classic comfort food uses sweet potatoes, spinach, cream cheese and sour cream to give it a dose of nutrients while still retaining the rich and creamy taste!

On my recent trip to Cincinnati, my sister prepared a fantastic dinner of twice baked sweet potatoes and baked chicken. I have always been a huge fan of twice baked potatoes, though the butter, bacon and cheese always had me feeling a little guilty after indulging. Don’t get me wrong, comfort foods have a place in our diets every now and then, but including these in the weekly meal plan was out of the question.
