I love St. Patty’s day, partly because my birthday is the next day, but also because of the festive foods and drinks. Growing up, we didn’t have any concrete traditions, but we did occasionally eat the traditional corned beef, cabbage and Irish soda bread meal. Since my hubby turned his nose up at the thought of this meal, I decided to think a little out of the box with a snack I knew my family would go for. I present to you, St. Patty’s Day Spinach Muffins!
