Crock Pot Buffalo Chicken Lettuce Wraps

I know I have mentioned this before, but the crock pot is by far one of my favorite kitchen appliances. I love the ability to prepare a meal in advance so that when dinner time comes, most of the work is already done and the meal is on the table quickly! As the cooler weather approaches, I rely even more on the crock pot for ready made dinners like this Green Chile Chicken Soup and this Veggie Loaded Baked Potato Soup; however, my husband is not the biggest fan of “crock pot food”. The usual complaint is that it is too dry. I have managed to come up with a few non-soup, non-casserole crock pot meals that pass his taste test- and this is one of them!

Watermelon Arugula Salad with White Wine Vinaigrette

With these hot temperatures we have been having, fruit has been my go-to food! It just seems to satisfy me when I come home from the day {usually sweating}. Also, any dinner that I can create that requires minimal oven use, is a winner to me! I recently had the watermelon feta salad at Panera Bread which inspired me to create this dressing and salad! I love the light flavor that the dressing provides, and the watermelon adds a sweetness that fits perfectly with the arugula. We had this salad as a side dish to Mahi Mahi; however, it would be great to bring for lunch as well.

Greek Pasta Salad

With the temperatures continuing to rise {at least here in Houston}, cold salads are a staple around our house. I like that I can prepare a dish without having to heat up any appliance in my kitchen yet still have a refreshing meal for lunch or dinner. And, with Memorial Day just around the corner, this pasta salad is the perfect addition to any get together you are attending this weekend!

Quinoa Greek Salad

My husband and I were traveling earlier this month {more to come on this in the next few weeks}, and it has been a struggle for me to get back in a routine of meal planning and cooking at home. I admit I got too comfortable with meals being planned and prepared for us, and the reality of being back home took a while to set in. With that said, I have been incorporating easy recipes into my meal plan the past two weeks to ease my way back into the kitchen. And, as an added bonus, I have been using recipes that we can eat off of for multiple meals. This quinoa greek salad recipe met all of my requirements, and the taste exceeded my expectations! Better yet, my husband loved it. It’s a win all- around!
