I love St. Patty’s day, partly because my birthday is the next day, but also because of the festive foods and drinks. Growing up, we didn’t have any concrete traditions, but we did occasionally eat the traditional corned beef, cabbage and Irish soda bread meal. Since my hubby turned his nose up at the thought of this meal, I decided to think a little out of the box with a snack I knew my family would go for. I present to you, St. Patty’s Day Spinach Muffins!

Citrus Herb Roasted Chicken

This time of year, it seems like we are usually in need of a tasty entree to take to an event or are hosting others at our dinner table. The task of creating a menu or choosing an entree large enough to feed a group of people can be daunting. I found this Citrus Herb Roasted Chicken recipe and knew I had to recreate it! The recipe is simple and perfect for a large group, as you can easily adjust the amount of chicken you are cooking. But, even for just two people, the recipe is an easy meal to make. One of the best parts is that you can make enough to have lunch or dinner leftovers for later on! It was a hit in our home, and I’m excited to share it with our HBH readers.

Cranberry Banana Bread

Every time we have overly ripe bananas in the house, I immediately want to bake banana bread. But, the shortening and/or butter content of most banana bread recipes can be shocking! Did you know that 1 stick (1/2 cup or 8 tablespoons) of shortening has 880 calories, 96 grams total fat and 28 grams saturated fat? Plus, with the second ingredient being fully hydrogenated palm oil {think trans fats} and other ingredients included like the preservative TBHG {yikes}, shortening is just scary! Butter is not any better with 2 times the saturated fat amount – 800 calories, 88 grams total fat and 56 grams saturated fat! So, I went on a mission to create a healthier, but just as tasty, banana bread with NO butter or shortening included. And, after playing around with the recipe a few times and holding taste tests with my banana bread lovin’ husband, I’m excited to share my {no butter included} Cranberry Banana Bread!
