5 Healthy Valentines Day Swaps

Valentines Day… a day in which we show those closest to us how much we love them! Many of the traditional ways to celebrate Valentines Day showcase high calorie dinners, high fat baked goods and high sugar candy. Boxes of chocolate, cupcakes and cookies, chocolate covered strawberries, and the list goes on! As you know, we are all about moderation, but there are some easy swaps you can make to avoid the extra calories and sugar rush on this holiday of love!

Quick Bites: Zoe’s Kitchen

We are back with another edition of our Quick Bites series, and today, we are looking at one of my favorite places to eat – Zoe’s Kitchen! I love the focus on healthy eating at Zoe’s Kitchen as well as the variety of options. In fact, Zoe’s provides a speciality menu called ‘Simply 500’ which lists the menu items that are already 500 calories or less or those that can be specially ordered to qualify. Also, for those people following specific diets (such as vegetarian, gluten free or vegan), the menu labels which menu items qualify making it easy to decide what to order! I wanted to narrow down the menu even further by taking a look at some of the other nutrients that play a role into what we would consider a healthier meal. Favorites at Trader Joe’s: Part 1

Trader Joe’s is – hands down- one of my favorite places to shop; I could spend hours in there! With locations around the country, the chain is known for keeping costs low by using their own packaging. But, my favorite part of the store is their focus on health without shoppers having to pay a premium. Whether you are following a specific diet or looking to make some healthy changes to your diet, there are many items that are not only healthy but are tasty. We wanted to share a few of our favorite items at Trader Joe’s, hoping that it will help you navigate the store next time you are shopping there!

5 tips to stay healthy while traveling + Hawaii recap

Around New Years, my parents, brother, husband and I went to Hawaii {specifically Oahu and Maui}. It was the best Christmas gift, and I think I am hooked on giving experiences and creating memories instead of gifts now! We spent the first few days in Oahu which included time on the beach and visiting Pearl Harbor. It was surreal seeing that memorial in person. After our time in Oahu, we flew to Maui to spend a few days. While there, we spent more time relaxing on the beach, took a road trip to Hana and were able to take a boat out to see some whales that spend their winter in the Hawaiian waters. One of my favorite nights was when we went to eat at Mama’s Fish House. Known as one of the top restaurants in the U.S., Mama’s Fish House is known for using all fresh and local ingredients. In fact, local fisherman provide the seafood that customers eat daily and even the local farmers provide the coffee beans that the restaurant serves. My meal was one of the best I have ever eaten! We had an incredible time, and it was hard to break free from shorts and flip flops once we were back.

Following a healthy diet while traveling can be extremely difficult if you are not prepared with the right tools! There are a few key things I have learned over the past few years that allow for me to balance healthy eating with a few splurges that always come with traveling!

Southwest Egg Cups

I am a fan of quick breakfasts, as you can probably tell from my overnight oats and baked oatmeal recipes. I’m always on the lookout for a breakfast recipe that I can prep ahead of time and quickly warm up in the morning but that still provides key nutrients, especially fiber and protein.  Eggs have always been a breakfast staple, but I used to wait to cook them until weekend mornings when I had more time to spend in the kitchen. After searching thru Pinterest for breakfast recipes, I decided to create my own healthier breakfast egg cup recipe. These cups are so tasty, packed with veggies and provide the protein punch I need in the morning to fuel my day.  By using half egg whites in this recipe, the nutrients of the yolk are provided but the calorie and cholesterol amounts are reduced. The trick to this egg cup recipe is sautéing the vegetables first, so the flavor is magnified in each cup.
