With the holidays coming up, it’s becoming harder to plan and prepare meals at home with the abundance of activities at nighttime. Whether these obligations are errands to run, school performances, or family get togethers, the nights that are available to cook at home always seems to dwindle during this time of the year. It’s important to continue to plan and prep ahead of time and choose meals that are going to quick and easy but still healthy. I previously talked about one of my favorite “go-to” meals when time is short – Panko Crusted Chicken. Today, I’m back with another favorite of ours – Almond Crusted Fish.
In early May, my husband and I visited Costa Rica for the first time with some of our friends. If you have not been there before, I highly recommend it! You can find a perfect mix of adventure and relaxation, and a wealth of activities on the beach or in the mountains. The scenery is breathtaking, and you could spend all day just soaking in its beauty.
