Fall Superfoods Bowl with Homemade Honey- Apple Vinaigrette

When I’m meal planning for the week, I have two priorities for each dinner I make. I strive to make a dish that is 1) healthy and 2) quick to prepare. I don’t want to spend hours in the kitchen at night. This brown rice bowl is AMAZING! We have tried similar bowls in restaurants, and my husband thinks this one might be better! You know when he is asking for a brown rice bowl with kale two nights in a row, that he actually likes it. In fact, he said this is one of his new favorite meals. I. am. shocked! But, also very happy because it took me a total of 30 minutes to prepare and bake an entire meal!

Panko Crusted Chicken and {healthy} Cinnamon Apples

My husband loves anything involving chicken and batter. For home, I created a healthier version of crusted chicken that he actually requests when I ask him what he wants for dinner. And the BEST part? It literally takes me ten minutes to prep it. That means, I can make it, put it in the oven to bake and enjoy time with him instead of being in the kitchen all night. Maybe that is why it’s his favorite meal?! Either way, I love that it’s a quick meal using ingredients I always have in my kitchen. When I’m in a rut of what to cook, I typically make this. For the Panko crumbs, you can buy the plain and add seasoning or choose pre-seasoned.  I usually purchase plain and season it ahead of time so my dinners are quick to prepare. I also keep frozen, organic chicken breasts in my freezer so whenever I need a quick meal, I have protein available for use.

Quinoa Greek Salad

My husband and I were traveling earlier this month {more to come on this in the next few weeks}, and it has been a struggle for me to get back in a routine of meal planning and cooking at home. I admit I got too comfortable with meals being planned and prepared for us, and the reality of being back home took a while to set in. With that said, I have been incorporating easy recipes into my meal plan the past two weeks to ease my way back into the kitchen. And, as an added bonus, I have been using recipes that we can eat off of for multiple meals. This quinoa greek salad recipe met all of my requirements, and the taste exceeded my expectations! Better yet, my husband loved it. It’s a win all- around!

Sweet Potato, Corn and Black Bean Tacos

Sweet potatoes have always been one of my favorite vegetables, and I love the versatility of them. When I found this recipe, I knew I had to try it. The tacos can be made in a variety of ways for various food preferences – without meat for a vegetarian meal or corn tortillas for a gluten free dish.  The black beans provide a protein source to make this a complete meal! But for my meat- lovin’ husband, I added rotisserie chicken to the mixture that I had leftover from the night before.
