Quick Bites: Chick-fil-a

Sometimes during the week, as much as we try to meal plan and prep, cooking at home just does not happen. Whether it’s a late day at the office, a Pinterest meal gone wrong, or a hungry child screaming, there are times when eating out on a time crunch is necessary. Especially as a dietitian, I have to give myself grace to realize it’s OK to not have a home cooked meal on the dinner table every night. A healthy lifestyle is truly all about moderation and making healthier choices. With that said, we wanted to start a new series on healthier options at some of the quicker food establishments. Our hope is that we can provide the tools for you to make a more informed decision when eating out. For our quick bites review today, we will look at Chick-fil-a!

Lemon Orzo Chickpea Salad

With as hot as it has been here in Houston, I find myself craving cool salads for dinner, but not always green salad. Many times pasta salads and potato salads are loaded with mayonnaise, making them a not so healthy choice. By using orzo (a small, delicate pasta similarly shaped to rice) and an olive oil based dressing, the salad has a lite and refreshing texture. This lemon chickpea orzo salad was easy to pull together after a day at work and serve cool with grilled chicken. There was not too much chopping or mixing, which I appreciate when time is limited. The hint of lemon in the dressing was refreshing and crisp! I found the original recipe here, but made a few modifications to make it my own.

My husband and I both enjoy trying new restaurants and experiencing a variety of cuisines from around the world. And, we live in the perfect city for doing so. In fact, Travel and Leisure just ranked Houston as the #1 city in the United States for foodies (source). Lemon Salmon with Basil, Tomato and Red Wine Vinaigrette Orzo

Last summer, my husband and I went with my extended family on an Alaskan cruise which was incredible! And talk about amazing seafood! I have always enjoyed salmon, but since that trip, I cannot get enough of it. And, the health benefits are even more of an incentive to eat it.  The omega 3 fatty acid content (also known as a type of essential fatty acid) as well as it being a great source of lean protein are a few reasons why you should aim to include salmon in your menu rotation. In fact, the American Heart Association recommends two servings of fatty fish per week, like salmon, for the heart health benefit of Omega 3’s.  In addition, these nutrients are beneficial for brain function and have anti-inflammatory properties that play a role in prevention of other illness and disease. The body does not make omega- 3 fatty acids, so it is important that a person’s diet provides these nutrients.
