Greek Stuffed Crescent Rolls

This recipe was inspired by my amazingly creative sister in law (Hi Ronika!). One night, she shared what she was making for dinner and sent over the recipe. Though I didnt have quite a few of the ingredients the recipe called for, I was able to come up with a similar version using what I had on hand, and the result was fantastic! This recipe is very versatile and could be modified with a variety of veggies, meats and cheeses to suit your liking. It came together fairly quickly, and though it seemed intimidating at first, it ended up being pretty easy!

Recipe Roundup- Pinterest Wins

Happy first week of summer to many of you! I love summer for many reasons- but the decrease in traffic tops my list 😉 We have been spending our days by the pool, mornings at swim lessons and sipping on fresh made “lemomade”!

Today I wanted to share some of my recent “Pinterest Wins” and new favorite recipes. While I love Pinterest, I have definetely encountered my fair share of Pinterest fails- which always upset me after spending the time and money to make the recipe. Pinterest is also one of my favorite tools to meal plan. I can access it from anywhere, its easily searchable, and it has recipes for anything your heart could desire!  So enought about how much I love Pinterest and on to the yummy recipes….

Greek Pasta Salad

With the temperatures continuing to rise {at least here in Houston}, cold salads are a staple around our house. I like that I can prepare a dish without having to heat up any appliance in my kitchen yet still have a refreshing meal for lunch or dinner. And, with Memorial Day just around the corner, this pasta salad is the perfect addition to any get together you are attending this weekend!

Shrimp Scampi with Zoodles

So this won’t go down as the healthiest recipe here on Healthy Bites Houston; however, it is one of the tastiest! My take on this classic dish is slightly healthier than the restaurant version, but doesn’t disappoint in taste! In my opinion, the key to a flavorful scampi is lots of fresh garlic and REAL butter! Yes, real BUTTER! As I mentioned, this is not the healthiest recipe to grace the pages of HBH, but it is made with whole foods and real ingredients that are good for the soul!
