4 Ingredient Basil Walnut Pesto + more Zoodles

Every time I buy a packet of fresh herbs at the grocery store, I tell myself, “I really need to plant an herb garden”. I always get frustrated paying $2-4 dollars for each packet of herbs only to feel rushed to use them the day I buy them since they don’t usually keep for more than a couple of days. The last time I was at Trader Joes, I finally bit the bullet and bought the basil plant for $2.99. I then stopped into Lowes to buy a pot and soil, only after consulting with my husband about whether I needed to transfer the plant to a larger pot, and if I actually needed to buy more soil. I know, I know, stupid questions for some of you more experienced gardeners, but in my defense I really have no experience with gardening!

Homemade Pizza Dough + Taco Pizza

Happy Monday! Since most of us need a little pick-me-up on Mondays, I thought we could talk about some delicious food….PIZZA!

I love pizza, it has always been one of my favorite foods, but when I became more aware of the food I was putting into my body, I knew I needed to find a healthier alternative to the typical take out and delivery pizza joints.

My dad worked at a pizza place in high school, so growing up, we often made our own dough at home and got to top it with our favorite things. As a kid, this was such a cool experience that we always looked forward to. I never really paid attention to how the dough was made. When I moved out and craved my beloved homemade pizza, I was initially intimidated by the concept of making dough from scratch. There was no way could possibly make dough…that is way too hard!

“Zoodles” with hatch chile crusted shrimp

Did you celebrate National Zucchini Day a couple of weeks ago? Yeah, me neither. I thought I was up to date on current nutrition trends, but I guess I missed this one. Who knew there was a day to honor the squash that is rich in folate, potassium and vitamin A. I started to see my instagram feed fill with images of oversized zucchini, stuffed zucchini boats, zucchini bread and even zucchini noodles. I was quickly inspired to pull out my shiny new spiralizer!

I have wanted a spiralizer for a while, and my wish was fulfilled when my husband got me this one for Mothers Day. Spiralizers come in all different varieties and price points, but the concept is the same. This gadget allows you to make tasty “noodles” out of various vegetables, such as zucchini, butternut squash and sweet potatoes. There are different attachments that create different size “noodles. The possibilities are endless, and just a quick Pinterest search of “spiralizer recipes” will have you drooling!

Roasted Vegetable Quesadillas

Im always looking for quick, healthy meals to prepare for my family. It can be challenging to incorporate veggies, lean protein and whole grains into your meals, while still appealing to non veggie loving husbands and toddlers!

These roasted vegetable quesadillas came together in about 20 minutes, and I had a slew of leftover roasted veggies to repurpose throughout the rest of the week. You could try a roasted veggie sandwich, add to a salad, or combine with a lean protein for dinner.
