Southwestern Loaded Baked Potatoes

Loaded baked potatoes are a beloved side to a steak dinner in our house, but the nutrition stats of the bacon laden, cheese filled and sour cream drenched potatoes are not so stellar. I came up with this healthier version of a loaded baked potato, with a southwestern flare, that can serve as a meal in itself!

Baked Chicken Parmesan with Zoodles

Italian food is perhaps my favorite type of cuisine. Warm creamy pastas, fresh basil, italian spiced meats and gooey¬†garlic bread can’t be beat! Part of my love affair with Italian food revolves around my aunt’s homemade marinara sauce. We have been spoiled for years now with hand delivered cases of her homemade sauce, and now the store-bought varieties just don’t do it for me. The recipe is top secret, but maybe one of these days she’ll teach me her magical ways!

Cilantro Lime {Cauliflower} Rice Burrito Bowls

This cilantro lime cauliflower rice makes an awesome rice substitute and base for a lightened up burrito bowl. Cauliflower is rich in antioxidants and fiber and low in calories and carbs. The cilantro lime flavor reminds me a lot of my beloved Chipotle burrito bowl, but with way less guilt!
