Salmon Cakes with Lemon Dill Cream

Salmon is a staple in my diet, but I find myself sometimes getting bored with the traditional season/bake method. Salmon burgers, patties and cakes are readily available at the grocery store, but often times come at a price or have some extra ingredients I could do without. One of my absolute favorite salmon burger patties is from HEB, but they have jalapeños in them which makes it too spicy to feed to the little one. I decided to come up with my own recipe so that I could control what was in it and make it desirable for everyone in the family!

I have tried salmon cakes with canned salmon, but haven’t been the biggest fan. Since I buy the large bag of frozen wild Alaskan salmon from Costco, I just defrosted two filets before prepping the mixture. The flavor was great!

Salmon is rich in omega 3 fatty acids which have a myriad of health benefits including improving cardiovascular health. Salmon is also a great source of protein which is essential for various functions within the body including muscle repair and growth!

This recipe comes together in just 15 minutes and cooks for another 15 minutes. A perfect 30 minute meal that the family will love!
