Pumpkin Spice Energy Bites

These energy bites are the perfect snack for when you are on the go and need a quick, healthy dose dose of protein and healthy fats. They are a great alternative to energy or protein bars that can be expensive, and often have a lot of added sugars and other ingredients.

I always find myself feeling the need for a sweet snack mid morning, but I’m not overly hungry. Sure an iced latte or a chocolate chip cookie would be amazing, but keeping those added sugars (and added calories) at bay is key! These protein bites are perfectly portioned to give you a little boost to get through to lunch time. They are made with ingredients many of you already have in your pantry, and only take about 10 minutes to put together. One or two of these as a snack keeps you feeling full and satisfied!

The recipe would be easily adjusted to include flavors and add ins you like- the base of dates, oats, protein powder and almond milk will allow for a variety of other delicious combos! Since its now officially September, we can start incorporating pumpkin into EVERYTHING 🙂 Anybody else with me?!

Pumpkin Spice Energy Bites

Serves: 14 balls
Ingredients
  • 1 cup rolled oats
  • 10 pitted medjool dates
  • ¼ cup vanilla protein powder (I used Vega)
  • ¼ cup pumpkin
  • ¼ cup peanut butter
  • ¼ cup almond milk
  • 2 tbsp chocolate chips
Instructions
  1. Place all ingredients except chocolate chips into food processor and mix until well combined.
  2. Fold in chocolate chips
  3. Form into balls
  4. Store in airtight container
