Gluten Free Chicken Nuggets

These nuggets are gluten free and full of flavor! They are baked, not fried, and made with whole chicken tenders as opposed to processed chicken products as many types of chicken nuggets are. These are perfect for the kiddos and adults alike!


Having a child has forced me to become a little more creative in the kitchen. I wouldn’t say my daughter is a particularly picky eater;  she loves most fruits and vegetables, loves pasta, rice and potatoes, and will drink any type of juice or milk. Unfortunately, she is somewhat picky when it comes to meat and it has been a challenge finding ways to prepare different types of meat that she will eat.

Prior to having a child, ill admit, I was naive in thinking that my child would never have chicken nuggets, hot dogs, or other “junk food”. Fast forward three years and chicken nuggets are one of the staples in her diet, one of the guaranteed foods she will eat. We have tried a variety of different brands- from the most expensive organic types to the good old Mickey Mouse shaped nuggets. She doesn’t seem to have a preference, so I got to work in the kitchen to make a healthier version- with simple, whole ingredients!


These are not just for kids- they are perfect to throw on top of a salad or to serve as a quick meal. They freeze well and are reheated easily. Let us know if you give this one a try!

First gather your ingredients:


Next crush the corn flakes and almond meal with salt and pepper


Dip the chicken in egg and batter mixture


Place onto lined cookie sheet and bake!

Gluten Free Chicken Nuggets

Serves: 8 servings
  • 2.5# Chicken tenders
  • 2 cups Corn flakes
  • ¾ cup almond meal
  • 2 eggs
  • salt and pepper to taste
  1. Preheat oven to 400 degrees. Line a large baking sheet with parchment paper.
  2. Trim chicken tenders into small pieces- about 2 inches long
  3. Whip eggs in pie pan (or other dish that is easy to dip)
  4. Place corn flakes, almond meal, salt and pepper in a large ziplock bag. Crush using your hands or a mallet
  5. Place crushed mixture into another pie pan (or dish that you can dip in)
  6. Dip each piece of chicken in egg, followed by breading mixture and then place on baking sheet.
  7. Bake for 15 minutes- flipping nuggets half way through baking time.
