Breakfast Quinoa

 This is an alternative to oatmeal, whole grain, protein filled meal that will keep you satiated until lunch time. Its extremely versatile and could be mixed with a variety of mix ins- I used seasonal berries for this batch, but I love to add dried fruit, hemp seeds, chia seeds, bananas, pumpkin etc. 


The first time I bought a large bag of quinoa at Costco, I was a little nervous that I would be able to find enough uses for the large quantity. I have some of my favorite recipes including Greek Quinoa Salad, Quinoa Fried Rice, and Protein Packed Quinoa Broccoli Bites, but I knew I needed to find some other options. I had heard of “Breakfast Quinoa” before, but never really given it a try. To be honest, it seemed a little too weird for me! After giving it a try, I was hooked. It is just as versatile as oatmeal, and is a nice way to switch up your standard breakfast, without straying away from a healthy bowl of whole grains.

I like to prep quinoa in larger batches, that way I can quickly put together recipes that call for cooked quinoa. I prepped a bowl of this in advance for the next morning and it held up well, but it doesn’t soak up extra liquid like overnight oats do- so keep that in mind when prepping your bowl!

Breakfast Quinoa

Serves: 1 bowl
  • ¾ cup cooked quinoa
  • ½ cup almond milk
  • 1 tbsp peanut butter
  • dash of cinnamon
  • 1 tsp maple syrup or honey
  • 3 strawberries- sliced
  • ¼ cup blueberries
  1. Mix quinoa, milk, nut butter, cinnamon and maple syrup together.
  2. Top with fruit and serve!
