Lemon Dill Salmon + Homemade Curly Fries

This easy salmon recipe is perfect for summer nights spent on the patio. It comes together in a matter of minutes and the end result is a fantastically moist, flavorful fish!


Salmon is one of my favorite types of fish, I always seem to have a bag of frozen wild caught Alaskan salmon in the freezer for those nights when I’m lacking the inspiration and need a quick, nutritious meal on the table. This weekend, we spent some time running errands, playing outside and relaxing. When I realized it was 5 pm and I hadn’t given a thought to what I was going to make for dinner that night, salmon was one of the first things that popped into my mind. We heated up the grill and got to work!

Growing up, my parents would make grilled salmon a variety of ways- cedar plank, seasoned with Old Bay, baked with seafood stuffing etc. My absolute favorite way was their Lemon Dill Salmon. Simply add a dollop of mayo ( I used about a teaspoon of olive oil mayo per filet), spread evenly atop the filet, top with dill week and a couple of slices of lemon. Wrap in foil, and grill for about 25 minutes or until fully cooked!


On the side, we served homemade curly fries compliments of my spiralizer!  I used two medium sized russet potatoes, seasoned with olive oil, salt and pepper. I baked them at 400 degrees for 30 minutes. You could easily throw these on the grill with the fish as well!




Both the salmon and the fries are toddler (and husband) approved! Let us know if you give either one of these a try!
