Greek Pasta Salad

With the temperatures continuing to rise {at least here in Houston}, cold salads are a staple around our house. I like that I can prepare a dish without having to heat up any appliance in my kitchen yet still have a refreshing meal for lunch or dinner. And, with Memorial Day just around the corner, this pasta salad is the perfect addition to any get together you are attending this weekend!

I love this pasta salad for many reasons, but one of my favorites has to be how colorful it is. It has every color in the rainbow in it – purple, green, red, orange, yellow- meaning a variety of nutrients! The light marinade that perfectly seasons the dish is healthy and flavorful.

To prepare, chop the cucumbers, bell peppers, and red onion in small bite sized pieces and slice the tomatoes in half. While chopping your veggies, boil your pasta, drain and set aside. In a small bowl, combine the red wine vinegar, olive oil, lemon juice, kosher salt, dill and oregano. In a large bowl, combine the cooked pasta, chopped veggies, marinade and feta cheese. Stir to combine and chill in the refrigerator prior to serving.

Ingredients
  • 2 cups dry whole wheat pasta
  • ¾ cup chopped cucumbers
  • ¾ cup chopped yellow and orange bell peppers
  • ¼ cup finely chopped red onion
  • 1 cup sliced cherry tomatoes
  • 4 Tbsp red wine vinegar
  • 4 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 tsp dried dill
  • 1 tsp dried oregano
  • ½ tsp Kosher salt
  • ¼-1/2 cup feta cheese (or to taste)
Instructions
  1. Chop the cucumbers, bell peppers, and red onion in small bite sized pieces.
  2. Slice the tomatoes in half.
  3. While chopping your veggies, boil your pasta per package instructions, drain and set aside.
  4. In a small bowl, combine the red wine vinegar, olive oil, lemon juice, kosher salt, dill and oregano.
  5. In a large bowl, combine the cooked pasta, chopped veggies, marinade and feta cheese.
  6. Stir to combine and chill in the refrigerator prior to serving.
