Cilantro Lime {Cauliflower} Rice Burrito Bowls

This cilantro lime cauliflower rice makes an awesome rice substitute and base for a lightened up burrito bowl. Cauliflower is rich in antioxidants and fiber and low in calories and carbs. The cilantro lime flavor reminds me a lot of my beloved Chipotle burrito bowl, but with way less guilt!


When I stumbled upon this prepared cauliflower rice at Trader Joes, I grabbed a small stash for the freezer. Though I didn’t have any specific recipes in mind to use it, I knew I would easily find ways to incorporate it into our weekly meals. I have prepared it a few times now, but this variation has been my favorite by far!


This frozen prepared cauliflower rice takes the hard work out of preparing a healthy side (think cleaning, cutting or chopping, boiling, steaming etc), and makes for a 10 minute prep/cook time. You could easily make your own fresh cauliflower rice by placing chunks of fresh cauliflower in a food processor or blender and pulsing until it is in small “rice like” pieces.

Start by chopping a few sprigs of cilantro (about 1/4 cup chopped), and juicing a lime. Add a tablespoon of olive oil to a frying pan and empty the bag of frozen cauliflower rice. Season liberally with salt and pepper. Let cook on medium heat for about 5-8 minutes or until fully heated and starting to very lightly brown. Add the lime juice and chopped cilantro, stir well and cook an additional 1 minute.

This “rice” is so versatile and could be served a variety of ways. It would be perfect as a side with a piece of grilled meat or fish, but we chose to make burrito bowls with ours. I have a few staples for burrito bowls including: grilled peppers and onions, chicken or beef, salsa, avocado and sour cream! I usually serve ours over a bed of spinach or lettuce, but this rice made for a flavorful, nutrient packed alternative! Simply place all of your desired toppings on top of a large bed of “rice” and enjoy! You’re getting a healthy serving of veggies all while feeling like your indulging in a hearty burrito bowl!

Serves: 2 cups
  • 1 bag cauliflower rice (Trader Joes- or homemade with ½ head of cauliflower)
  • 1 lime- juiced
  • ¼ cup chopped fresh cilantro
  • salt and pepper
  • 1 tbsp olive oil
  • Optional
  • Grilled chicken breast or thighs
  • Grilled bell peppers and onions
  • Salsa
  • Sour Cream
  • Avocado
  1. Heat olive oil in frying pan over medium heat
  2. Add cauliflower rice, salt and pepper
  3. Cook for 5-8 minutes, or until fully cooked/very lightly browning
  4. Add cilantro and lime juice. Stir well and cook an additional minute
