30 Minute Meal: Mahi Tacos with Avocado Salsa

These tacos are simple, easy to prep and full of flavor! They come together in 30 minutes and are definitely a crowd pleaser!


So after asking my hubby to take some meat out of the freezer yesterday morning, I fully expected to come home after work to a package of ground turkey defrosting in the refrigerator, ready to be made into delicious turkey burgers. Unfortunately, hubby left the meat in the sink to defrost, and 9 hours later it was lukewarm and obviously had to be pitched. My tired and worn out brain was left scrambling to come up with an idea for dinner. After a quick scan of the refrigerator and freezer, I decided on mahi mahi, but was stumped as to what to pair it with.  I remembered these delicious Mahi Tacos with Mango Salsa, and decided to get creative with what I had in the produce drawer. The result was a fantastically creamy, flavorful, clean eating avocado salsa that paired perfectly with the Mahi Mahi.

I used frozen wild caught Mahi filets from Costco, but you could easily use fresh filets as well. Line a cookie sheet or baking pan with foil and spray with cooking spray. Place the fish on the tray and season as desired- I used Old Bay. Place in the oven at 350 for 30 minutes.


While the fish is cooking, gather your avocado, bell pepper, red onion, tomatoes, salt, pepper, lime and crushed red pepper flakes. I used my chopper, but you could dice the ingredients as well. Combine avocado, bell pepper, red onion and tomatoes in a bowl. Season with salt and pepper to taste- I used about a 1/2 tsp of salt and 1 tsp pepper. Squeeze the juice of 1/2 a lime and crushed red pepper flakes to taste (I used about 1 tsp for a good kick). Mix well and set salsa aside.

Top fish with salsa and serve as desired. I had mine atop a corn tortilla and hubby had his with a hard taco shell. It would be just as good plain- without tortillas, shells or chips!

  • 2 Mahi Mahi Filets (or more for leftovers)
  • 1 bell pepper
  • 2 small avocados
  • 1 cup cherry tomatoes
  • ¼ of small red onion
  • 1 lime
  • salt- to taste
  • pepper- to taste
  • crushed red pepper flakes- to taste
  1. Preheat oven to 350
  2. Line a cookie sheet with tinfoil and spray with cooking spray
  3. Place filets on cookie sheet and place into the oven
  4. While fish is cooking, chop or dice avocado, bell pepper, tomatoes and onion.
  5. Season with salt, pepper and crushed red pepper to taste.
  6. Squeeze juice of half a lime on top of salsa and mix well to combine.
