Week in review #2 + Friday Favorites

We are back with another edition of our week in review to share what we have been doing and eating this week! Hopefully, this gives you a better glimpse into our lives and also gives you some meal inspiration for the following week! We are also linking up with Heather and Katie to share some of our Friday favorites.

Week in review:

Saturday: (Caitlin)- We went to our neighborhood spring festival! We have one each season, and this one did not disappoint…pony rides, petting zoo, face paint, and jumping castles are the way to a child’s heart!

Sunday: (Caitlin) – Sunday green smoothies again! The little one loves to help add the ingredients to the blender and then push the buttons. It’s nice to have a kitchen helper around who helps me make healthy meals!

Monday: (Laura) – I was off work so I spent much of my day relaxing and meal planning/ prepping for the week! I took my weekly trip to HEB after making my grocery list and got home to start cooking! I made two meals – this recipe in the crock pot for dinner + lunch for the week with a few extra ingredients to add my own flavor and HBH’s Balsamic Chicken and Wild Rice for friends who just had a baby.

Tuesday: (Laura) – This week, our dinners are all about quick meals due to a hectic schedule at night. I grabbed some salmon at HEB and paired it with a salad and veggies for a quick meal!

Wednesday: We celebrated Registered Dietitian day at work with a yummy lunch with our fellow RDs!

Thursday: (Laura) – I had dinner with some friends at Zoe’s Kitchen – always one of my favorite places! Have you tried their basil pesto hummus? It is incredible! Do not go to Zoe’s and leave without ordering it.

(Caitlin) – We celebrated our 4th anniversary at Capital Grille in City Centre. Our meals were fantastic and the service was excellent! We started with an iceberg wedge salad, Gorgonzola crusted New York strip for me and seated tenderloin and lobster tail for the hubby, with a side of their highly recommended lobster mac and cheese to share. We finished with a warm chocolate cake and our server brought us a sample of the ricotta crime brûlée cheesecake. All the dishes were delicious, and we would highly recommend Capital Grille for a special occasion celebration!

Friday Favorites:

My chocolate peanut butter power bites were such a hit in our house during our no added sugar challenge last week, that I’m anxious to try a few other similar recipes. I have been eyeing these Cranberry Pistachio Energy Bites from Gimme Some Oven and plan to make them soon!

You probably know my love obsession for water bottles by now, so I’m sure you are not surprised to hear that I’m excited about a new water bottle coming soon! I just saw today that Swell is launching a new line exclusively for Target called Sipxswell on April 1st- 15oz bottles for $24.99. I hope this isn’t an April Fools joke because you know I’ll be at Target on 4/1!

Have you heard the news? Julianne Hough announced in December she is collaborating with MPG sports for an athleisure collection, and this week, announced it is officially online. I might have a slight girl crush on Julianne between watching her on Dancing with the Stars and recently in Grease, so the fact she is releasing her own line of workout gear makes me super excited! I am always way more motivated to go workout if I have new workout gear on– surely I’m not the only one like that?! PS – did you check out her kitchen on her blog announcement? #kitchengoals

And, speaking of Dancing with the Stars, I’m pumped that fellow Aggie and superbowl MVP, Von Miller, will be on the show this Spring dancing with my favorite pro dancer – Witney Carson! It seems like it will be a fun season. Do any of you watch DWTS?
