St. Patty’s Day Spinach Muffins

I love St. Patty’s day, partly because my birthday is the next day, but also because of the festive foods and drinks. Growing up, we didn’t have any concrete traditions, but we did occasionally eat the traditional corned beef, cabbage and Irish soda bread meal. Since my hubby turned his nose up at the thought of this meal, I decided to think a little out of the box with a snack I knew my family would go for. I present to you, St. Patty’s Day Spinach Muffins!

I adapted these from a blueberry muffin recipe I had written down in a cookbook comprised of recipes from friends and family at my bridal shower. I decided to add spinach for the boost in nutrients (and to make them a fantastic green color), and bananas for added sweetness. Instead of using traditional white processed flour, I made homemade almond flour and oat flour using my vitamix. Instead of paying for prepackaged alternative flours, try making your own! It took me all of 5 minutes, and i know i saved money and also significantly increased the nutrient content by avoiding processed white flour. I also decreased the sugar, since I added the bananas. Lastly, I added flax meal to boost the omega 3 fatty acid content. These muffins are packed with vitamins and minerals and make a great snack or complement to a breakfast meal. They have a nuttier flavor due to the almond flour and flax meal, and are not as sweet as traditional blueberry muffins; however, munching on these healthier alternatives will save you a significant amount of saturated fat and calories!

St. Patty's Day Spinach Muffins

Ingredients
  • 1 cup almond flour
  • 1 cup oat flour
  • ½ cup flax meal
  • ½ cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 2 tsp ground cinnamon
  • ½ tsp salt
  • ¼ cup olive oil
  • ¾ cup milk
  • 6 oz fresh spinach
  • 2 mashed ripe bananas
  • 2 tsp vanilla extract
  • 1 cup blueberries
Instructions
  1. Preheat oven to 350. Place all dry ingredients in large mixing bowl. Set aside. Place oil, milk and spinach in the blender and blend on high until spinach is completely pureed. Add mashed bananas and vanilla, blend on low just to mix. Pour wet ingredients onto dry ingredients and mix well. Fold in blueberries. Pour into muffin pan, filling cups ⅔ full. Bake at 350 for 20-25 minutes or until toothpick comes out clean.
