How are you doing with our no added sugar challenge? I’m not going to lie – it’s been hard for me at times. My husband came home from work on Monday dying for some dessert for his afternoon snack, and I felt the same way. It definitely takes will power to say ‘no’ to sugar. Also, by keeping healthier snacks on hand, it’s less tempting to resort to the sugary items in the pantry.  I stocked up on a few snacks yesterday at HEB: hummus, fresh vegetables, and fruit. We have also eaten quite of few of the peanut butter chocolate power bites which have curbed any sort of chocolate cravings we have had! As the week goes on though, I find myself craving less sweets which was a goal for me when starting this challenge.

I wanted to create a fulfilling dinner this week that wouldn’t leave us hungry and searching the pantry for after dinner snacks. This Asian Quinoa Meatball recipe is TO DIE FOR! Each meatball is packed with flavor but all of the ingredients are healthy, low fat and low in sugar. You could even make these meatballs for a light appetizer, and you would be the hit of the party. I included quinoa in the recipe for added nutrients, and my husband could not even tell it was in there until I told him. I call that a win!

I prepared zoodles to go with my meatballs, because it’s an easy and healthy side {and let’s be honest – Caitlin and I have a love for our spiralizers}! I sauteed the zoodles with an incredibly flavorful but light sauce as well as broccoli for an extra veggie punch.  I combined everything together for a delicious and easy meal that will sure to please anyone you feed it to! If you did not want to do zoodles, you could prepare our quinoa fried rice recipe as a side dish.  Also, to maximize the ingredients used in this dish, the leftover quinoa and broccoli could be used to make our quinoa broccoli bites. I love being able to use leftovers in creative ways so I’m not eating the same meal over and over again.

To prepare the dish, create your zoodles and set aside. Also, make sure you have cooked quinoa ready to go. (I will sometimes prepare a bag batch of quinoa on Sundays to have for the week. It makes recipe prep and meals easier for me). As desired, steam broccoli to use in your dish. Combine the ground turkey, quinoa, minced garlic,  green onions, cilantro, soy sauce, sesame oil, Sriracha and salt/ pepper to taste.  Stir to mix together using a wooden spoon or clean hands. Roll the mixture into 1 1/4- 1 1/2 meatballs (you will form about 20 or so meatballs, depending on size). Place the meatballs on a lined baking sheet and cook at 400 degrees for 20 minutes.

While the meatballs are cooking, combine the soy sauce, sesame oil, fresh lime juice, water and grated ginger. Just prior to when the meatballs are done in the oven, toss to combine the zoodles, steamed broccoli and ginger lime sauce in a saute pan. Serve warm with meatballs.

  • 3-4 fresh zucchini, formed into zoodles
  • For the meatballs:
  • 1 pound 93% lean ground turkey
  • ¾ cup cooked quinoa
  • 2 cloves garlic, minced
  • 2-3 green onions, thinly sliced
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tsp Sriracha (or more to taste)
  • Salt and pepper to taste
  • For the sauce:
  • 3 Tbsp soy sauce
  • 1½ tsp sesame oil
  • 1½ Tbsp fresh lime juice
  • 1 Tbsp freshly grated ginger
  • 1½ Tbsp water
  • Steamed broccoli florets as desired
Instructions

  3. Steam broccoli.
