Recipe Round-up

We are starting a new series called Recipe Round-up where we share some of our favorite recipes from the past few weeks. Our hope is that these recipes will make meal planning a little easier by highlighting a few recipes that we have tried or are anxious to try ourselves!

My friend sent me this recipe a few days ago from the Foodie Dietitian blog and raved about how incredible it was! I’m dying to try it; it’s actually on our menu for next week! I’m trying to incorporate more plant based recipes into our rotation, and this seems like the perfect one to add.

With the temperatures in Houston still on the cooler side, I plan to put this recipe from A Spicy Perspective on the menu rotation in the next few weeks. This light and flavorful soup seems to be a great option to fulfill my cravings for Greek food while keeping me warm! It would also be a great dish to bring for lunch.


This is one of my favorite recipes, and to make it even better, it’s made in the crock pot! The pork is extremely tender, and the glaze is the perfect combination of sweet and savory flavors. This recipe is also a great option for when you may be hosting a larger group of people or would like leftovers for the week.

Last Sunday for the Superbowl, I made a greek yogurt ranch dip using greek yogurt and skim milk. However, I never can get past the amount of fillers and ingredients in all of the Ranch dressing and dip packets at the grocery store. I had always assumed that making the ranch seasoning would be difficult, until I found this recipe. It’s easy to make this one day and keep in your pantry for later!

Salmon burgers are usually a menu item that I order at restaurants, but I have not really tackled making them at home. I love that this recipe from Pinch of Yum mixes in a variety of herbs and quinoa to form the patty and even includes a homemade dressing recipe to drizzle on top! This recipe is another great dinner option.

I made this recipe for the first time a few months ago and was amazed by the amount of flavor it had and how crisp the chicken was! The preparation was quick and easy, making it a perfect meal for busy week nights.

My ideal dessert is one with a combination of sweet and salty, and these almonds from Sally’s Baking Addiction look right up my alley. By keeping the ingredient list simple and natural, these almonds are a perfect guilt free dessert or snack option. I have also been wanting to try the same recipe but with orange slices!

I have had my eye on these bites from The Skinny Fork over the past few weeks, and they look perfect for celebrating Valentine’s Day all month long! These balls are the perfect dessert to keep in the refrigerator or even bring to a celebration where dessert might be needed. By using greek yogurt and substituting some of the sugar for Stevia, the fat, sugar and overall calorie content is reduced compared to other cake ball recipes.
