Mini Mexican Bites: Superbowl Party Appetizer

Football season is big in our house, and I’m sure in many of your homes as well! Growing up, watching football wasn’t just a hobby, but more of our Sunday tradition after church. And, not much has changed since leaving for college or getting married! I associate the end of summer with the start of football. My family and husband are fans of the Houston Texans, so we usually run home from church to catch what we can of the game. And, attending Texas A&M turned my Saturdays into football days as well, and I LOVE it! It’s hard not to enjoy football when you live in College Station.

Pretty much every time we gather with family or friends for any football watching event or tailgate, food is always involved!  The epitome of football watching parties for us is for the Superbowl.  I do enjoy watching the actual game, but, let’s be honest, I’m mostly there to watch the commercials, halftime, and for the food!  For us, it tends to be a “potluck” event where everyone brings their favorite snack items to share. Many of those snacks, although extremely tasty, have calories that add up quickly!

One of the keys to avoid constant snacking at game day parties is to choose more nutrient dense items. By choosing food with a combination of protein and fiber, like fresh vegetables and greek yogurt dip, hummus, or grilled chicken, you will fill up quicker.  For our upcoming Superbowl party, I wanted to bring a protein and fiber filled snack that would be healthier but would be just as tasty. So, I decided on these Mini Mexican Bites which can easily be made vegetarian or gluten free!

To prepare, combine the lean ground turkey, chili powder, garlic powder, cumin, salt and pepper in a pan and sauté until cooked thoroughly. In a separate pan, cook black beans as instructed and drain. Once cooked, combine with the cooked ground turkey and set aside.  Using a round cookie cutter or cup, cut out circles from the tortillas (1 circle for each muffin cup). Microwave all of the circles at once for 10-15 seconds to make them easier to form and then place each circle in a muffin cup (form with your hands). Spoon in the ground turkey/ black bean mixture and then sprinkle a small amount of shredded cheese on top. Cook at 425 for 10 minutes until the tortilla is crispy. Top with a dollop of greek yogurt, pico de gallo and other toppings of your choice (olives, scallions, peppers, etc). Enjoy!

  • Shredded cheddar cheese (or cheese of your choice)
  • Toppings of choice (greek yogurt, pico de gallo,etc)
