5 Ingredient Garlicky Sun-dried Tomato, Artichoke Zoodles

Looking for a quick, flavorful, dare I say “gourmet” side dish to serve with your favorite protein? This simple 5 ingredient spiralized zucchini recipe will be sure to impress!

On my continued quest to sneak veggies into my hubby’s diet, I have had to get creative to keep things interesting for him. There are only so many green smoothies he will put up with… 😉

This recipe came to life after roaming through the pantry, looking for some things to pair with two large zuchhini I had planned to spiralize. I have always loved the combo of sun-dried tomato and artichoke on homemade pizza, so I figured it would go well in a faux-pasta dish as well.

Simply spiralize the zucchini, saute with garlic, olive oil, sundried tomato and artichokes and voila- a veggie packed side dish that is also rich in omega 3’s, low in carbs and rich in flavor! Check out the recipe below and let us know if you give it a try!

Serves: 2 cups
  • 2 large zucchini
  • 2 garlic cloves, minced
  • ½ cup sundried tomatoes- julienned
  • 1 cup artichoke hearts- roughly chopped
  • 1 tbsp olive oil
  • Optional: feta, parmesean or garlic for topping
  1. Place olive oil in sauté pan
  2. Spiralize zucchini, place in sauté pan
  3. Place sundried tomatoes, garlic and artichokes in pan
  4. Sauté on medium heat until zucchini is slightly softened, about 5 minutes
