Purple Sweet Potato + Egg + Avocado Bowls

Busy nights call for quick dinners. 3 ingredients, ready in less than 20 minutes- it doesn’t get any better than that!

I got hooked on purple sweet potatoes a few months back after seeing a recipe on Pinterest. Since I remain obsessed with my spiralizer, naturally, my first thought on how to prepare these new-to-me potatoes was of course to make swooddles (get it…sweet potato noodles…ok maybe not 🙂

Purple sweet potatoes have only been commercially available since 2006, and have a slightly different taste and texture than traditional sweet potatoes- slightly sweeter and more dense. Nutritionally, purple sweet potatoes are rich in anthocyanins, a phytochemical, which has been shown to reduce risk of cancer and lower blood pressure (source). Along with traditional sweet potatoes, purple sweet potatoes are a good source of fiber and sit lower on the glycemic index than white potatoes, making them a better choice overall.

First, I spiralized a couple of purple sweet potatoes, sprayed with olive oil and sprinkled with sea salt. Spread them out well on a baking sheet and bake for ~15 minutes at 400 degrees- stirring about half way through. If you don’t have a spiralizer, slicing into thin rounds would work just as well.

Next, cook a couple of eggs the way you like…for me its over easy with salt and pepper. Top with some cubed avocado…and you’re done!

I prepped more than one meal worth, so the next night, i just had to cook the eggs and slice the avocado. Dinner in 5 minutes, yes please! I love the simplicity of this meal, but also the nutrition stats- packed with fiber, protein and healthy fats this is a well rounded meal that will keep you feeling full for hours!
