Friday Favorites-Food Focused

I am slowly but surely finding my way out of a meal planning rut. Does that ever happen to you? I lost all creativity and motivation for meal planning and prepping. We were getting by with some of our standard meals and snacks- turkey burgers, zucchini noodle spaghetti etc. Leave it to some new grocery items and Pinterest to leave me inspired and refreshed with new ideas to try!

Today we are back with another installment of Friday favorites- Food focused.  These are some of the things we have been noshing on this week. As always, thanks to Heather and Katie for the link ups!

Bare Apple Chips

These apple chips are a great snack when you are craving something sweet and crunchy. I love that there is only one ingredient: Apples. I have also dipped them in almond butter for a more substantial snack.

Strawberry Banana Kefir

I have been obsessed with Kombucha since I mustered up the courage to try it. In an effort to incorporate more probiotics into my daughters diet, I picked up some Kefir- kind of like Kombucha’s cousin! Like Kombucha, Kefir is fermented and provides various strains of probiotic bacteria. It is similar to yogurt, though slightly more tart and liquid consistency. I love that in addition to the healthy dose of probiotics, I’m also getting a good dose of calcium and protein! Try it plain, or mix it with some fruit and granola for a well rounded meal.

I pinned this recipe a couple of weeks ago and am dying to try it! Warm soups have been my go to for lunches lately.

[Homemade] White Chocolate Cranberry Trail Mix

Oh trail mix, you get me every time! I usually avoid pre-made trail mix because I have no sense of portion control. Can anyone else relate?! What I have found works great is to buy the ingredients separately and make small batches. This way, I am less likely to keep taking handful after handful, keeping my portion in check! I love the combo of white chocolate and cranberry, and mixed with healthy fats and protein from the nuts, this mix satisfies my cravings while still providing some nutritional benefit!

Slow Cooker Veggie Lasagna via The Fitnessista

This slow cooker lasagna is fabulous! It is quick and easy to prepare, makes leftovers, and incorporates veggies–everything I shoot for when planning a meal! I have made variations of this recipe numerous times- added different veggies, taken away spinach, used different types of marinara- and they have all come out fantastic!

Bitsy’s Brainfood Smart Cookies

These cookies have been a great snack to keep in my toddlers backpack. As a mom, you always have to be prepared with snacks, but packing fresh, nutritious snacks daily can be tough! These cookies are made with all organic ingredients, including fruits and vegetables. They are also nut free, making them a great option for school lunches. They are shaped like letters- which has an added entertainment bonus for my two year old. Oh, and they taste pretty good too! These are the perfect alternative to ordinary crackers or cookies!

  1. I LOVE those apple chips. We give them to my son as quick snacks. You might also dig freeze dried apples as well!
