Quick Dinner: Almond Crusted Fish

With the holidays coming up, it’s becoming harder to plan and prepare meals at home with the abundance of activities at nighttime. Whether these obligations are errands to run, school performances, or family get togethers, the nights that are available to cook at home always seems to dwindle during this time of the year. It’s important to continue to plan and prep ahead of time and choose meals that are going to quick and easy but still healthy. I previously talked about one of my favorite “go-to” meals when time is short – Panko Crusted Chicken. Today, I’m back with another favorite of ours – Almond Crusted Fish.

This recipe is super easy and requires minimal ingredients. In fact, these ingredients are ones that I always keep on hand for a night where a quick meal is needed.  I typically purchase whatever fresh fish is available and cheapest at the grocery store – catfish, tilapia, mahi mahi, etc. You can even purchase frozen, organic fish at Costco to have on hand for whenever you need a quick dinner!

First, prepare your almond mixture by mixing together finely chopped/ ground almonds, salt, pepper and additional seasonings as desired (garlic salt, lemon pepper, dill, parsley) on a plate. Prepare your fish by washing and then pat dry. Set aside on a separate plate.

Heat the olive oil over medium heat. To create the almond crust, lightly cover the fish in the flour, dip the fish into the egg whites and then cover the fish with the almond mixture before setting into the pan. Allow the fish to cook about 5-10 minutes on each side until the center is opaque and the fish is flaky when cut.  Finish with a squeeze of fresh lemon before serving. Enjoy!

  • ½ cup finely chopped or ground almonds
  • 1 tsp Kosher salt (or to taste)
  • 1 tsp pepper (or to taste)
  • Additional herbs/ spices on hand as desired: dill, lemon pepper, parsley
  • 1 lb white fish of choice (Tilapia, catfish, etc)
  • ¼ cup flour
  • 1-2 egg whites, beaten
  • 1 Tbsp olive oil
