Panko Crusted Chicken and {healthy} Cinnamon Apples

My husband loves anything involving chicken and batter. For home, I created a healthier version of crusted chicken that he actually requests when I ask him what he wants for dinner. And the BEST part? It literally takes me ten minutes to prep it. That means, I can make it, put it in the oven to bake and enjoy time with him instead of being in the kitchen all night. Maybe that is why it’s his favorite meal?! Either way, I love that it’s a quick meal using ingredients I always have in my kitchen. When I’m in a rut of what to cook, I typically make this. For the Panko crumbs, you can buy the plain and add seasoning or choose pre-seasoned.  I usually purchase plain and season it ahead of time so my dinners are quick to prepare. I also keep frozen, organic chicken breasts in my freezer so whenever I need a quick meal, I have protein available for use.

With fall now here and our slightly cooler temperatures, I had to celebrate with a batch of cinnamon apples – another favorite of his. But, I created a healthier dish by cutting back on the brown sugar and butter of the typical recipe. And, I used Truvia’s brown sugar blend to cut back on the grams of sugar. This side dish could be a special addition to any meal – breakfast, lunch or dinner. Or, for picky eaters who refuse fresh apples, try this recipe instead! I did the prep for my cinnamon apples (which took about 5 minutes) while the chicken was baking. The smell of cinnamon that spread through my house was another added bonus!

Preheat the oven to 350 degrees. To prepare the chicken, defrost your frozen chicken breasts and pat dry. Marinate the chicken in the liquid or dressing of your choice – water, greek yogurt, olive oil, egg whites, salad dressing, etc. For this meal, I used yogurt based honey mustard dressing to lightly cover each side. Then, coat each side in the panko crumb mixture. Place on your greased cookie sheet (or cover with aluminum foil for easy clean up) and cook for ~40-45 minutes until well done.

While the chicken is baking, peel the apples and cut into small slices. I typically use (~1/2 to 1 whole apple per person, depending on the size of the apple). Once sliced, throw into a saucepan, and mix in brown sugar, cinnamon, nutmeg and small pat of butter. Cook over medium heat for about 8-10 minutes until apples are tender. Serve warm.

Once everything was ready, I added a green salad to the plate for a complete, super quick meal! Enjoy!

Ingredients
  • 2 chicken breasts
  • ½ cup Panko Crumbs
  • Dressing of choice to lightly marinate

  • 1-2 apples, peeled and sliced
  • ⅛ cup Truvia brown sugar baking blend (or use regular brown sugar)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon butter
Instructions
